Argentine Parrilla and Santa Maria Grills

Built around the Argentine parrilla and Santa Maria traditions, the SM Series combines heavy American plate, a mortared firebrick-lined cooking chamber, independent grate-height control, and dedicated ember management in a platform designed specifically for live-fire cooking.

The adjustable main cooking surface gives the cook direct control over the relationship between food and fire. The integrated brasero produces clean-burning embers that can be moved beneath the cooking grate as needed.

Every SM Series grill starts with a proven core platform and can be configured around the cook, from iron cross and hanging systems to rotisserie, specialty grates, shelves, and other purpose-built accessories.

Brasero Firebox
A dedicated brasero firebox built from 1/2-inch solid steel rod and 1/4-inch plate. Burn wood separately, develop clean coals, then move those embers beneath the main cooking surface as the cook demands.

Plus: butcher block work surfaces, folding and fixed side shelves, overhead utensil hooks, custom maker marks, dual grate controls, specialty cooking grates, heavy-duty casters, iron cross asado frames, rotisserie systems, and fixed installations. Beyond the Standard Line

Larger Formats
The SM platform is not capped at the standard line. Longer cooking surfaces and deeper chambers are fabricated to order, with final dimensions confirmed on a call before anything is cut.
Integrated Smoker Builds
A Santa Maria and a vertical smoker on a single welded base, thermally separated so both run at once without interference. Live fire on one side, low and slow on the other, managed by one cook from one position.
Fixed and Built-In Installations
Cooking stations designed to sit permanently in an outdoor kitchen rather than roll. Surround dimensions, clearances, and site access are worked out before fabrication begins.
