I am new to hand-forged knives. Which should I buy first?
Start in Working Blades ($195 to $275). These are professional-grade daily drivers. Brisket slicers, serrated carvers, everyday cutters. Same hand-forged Brazilian steel as the apex tier, sized for the line, the pit, and the cutting board. Once you know how the steel cuts, step into Collector's Edition ($300 to $500) for partial 24K gold and exotic handle materials, or Crown Jewels ($500 to $995) for full gold, Damascus, and Mokume Gane.
Are these knives suitable for professional kitchen use?

What does 58-60 HRC mean, and why does it matter?
HRC stands for Rockwell Hardness, the standard measure of steel hardness. 58-60 HRC is the professional chef standard. Hard enough to hold a razor edge through a full service. Not so brittle that it chips on the bone. This is the sweet spot for high-performance culinary knives.
What is the difference between your steel types?
We work with multiple steels chosen for specific blade profiles. 1095 high-carbon for exceptional edge retention and ease of sharpening. 5160 spring steel for toughness and flexibility under pressure. Stainless artisan blends for corrosion resistance in working kitchens. Damascus (folded and pattern-welded) and Mokume Gane (fused mixed metals) appear in Crown Jewels pieces. Each steel is selected by the bladesmith for the knife it becomes.
What about the handles?
Handles are built from stabilized Brazilian hardwoods, custom resin pours (including gold leaf), and artisan micarta. Every handle is hand-fit to its blade. No two knives leave the forge identical.

How do I maintain the 24K gold finish on my blade?
Gold-plated blades need gentle care. Clean with a soft, damp cloth only. Never use abrasive materials or scouring pads. After cleaning, dry completely and apply a thin layer of food-safe mineral oil to preserve the gold finish. Professional restoration is available if the gold needs refreshing over time.
What is the best way to clean my artisan knife daily?
Hand wash with mild soap and warm water immediately after use. Dry completely with a soft cloth. Never let it air dry. Never put these knives in the dishwasher. Never let them soak. Store in the provided leather sheath or on a magnetic block to protect the edge.
How often should I sharpen my knife, and what method should I use?
With proper care, these knives hold their edge for months. Sharpen with quality whetstones when needed. We recommend a 1000 / 6000 grit progression. For convex edges, maintain the original angle. Professional sharpening is recommended annually to preserve the blade geometry.
